Homemade Beet Crackers (Gluten-Free)

Ingredients
- 1/3 cup pureed beets
- 1 ½ cups blanched almond flour
- 1/3 cup ground flax
- 1/3 cup tapioca starch
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- Flaked salt (topping)
Recipe
- Preheat the oven to 350ºF.
- Take a large mixing bowl, and combine almond flour, ground flax, tapioca starch, and salt.
- Now, mix in the pureed beets and olive oil to the dry ingredients. The dough may appear dry at first, but keep mixing.
- Knead the dough with your hands until a ball is formed.
- Place a piece of parchment paper on the working surface, then place the prepared dough over it.
- Place another sheet of parchment paper over the dough.
- Roll the dough with a rolling pin to a 1/8-1/4 inch thickness.
- Remove the top sheet of parchment paper, then cut the crackers into squares with a pizza cutter or sharp knife.
- Sprinkle the flaked salt.
- Transfer the crackers to a baking sheet without removing the bottom layer of parchment paper.
- Place them in the oven and bake at 350°F for 20 minutes.
- Remove the crackers from the oven and separate them to create a little space between each cracker.
- Place them back in the oven and bake for another 8-10 minutes.
- Take the crackers out of the oven and let them cool on the baking sheet.
- The crackers will be soft at first, but will turn crispy as they cool down.
- Store the cooled crackers in an airtight container at room temperature for 1 week and in the fridge for 2 weeks.
