Healing Miso-Ginger Lemon Detox Broth

Ingredients
- 4 cups low-sodium vegetable broth
- 2 cups baby spinach or kale
- 2 tablespoons white miso paste
- 2 tablespoons fresh ginger (grated)
- 1 tablespoon extra virgin olive oil
- 3 cloves garlic (minced)
- 1 large lemon (juiced and zested)
- 1 teaspoon ground turmeric (optional)
- Sea salt (adjust to taste)
- Black pepper (adjust to taste)
Recipe
- Place a medium pot over medium-low heat and heat the extra virgin olive oil.
- Add the grated ginger and minced garlic to the pot, then sauté for 2 minutes or until it is fragrant, without turning the garlic brown.
- Pour the vegetable broth into the pot and add ground turmeric.
- Bring the pot to a simmer and let it simmer for 8 minutes to allow the flavors to meld.
- Turn off the heat, then scoop out 1/4 cup of warm broth into a small bowl, and add miso paste.
- Now whisk the paste continuously until no clumps are visible.
- Stir the mixture back into the pot and mix well.
- Add fresh kemon juice, lemon zest, and baby spinach.
- Gently stir until the spinach leaves are wilted from the residual heat.
- Adjust the seasoning with sea salt and black pepper.
