- 7 oz fresh strawberries
- 2/3 cup coconut cream
- 1/4 cup aquafaba
- 1/4 cup maple syrup
- 1/2 teaspoon vanilla extract
- 1 teaspoon agar powder

- Start by rinsing the strawberries under cold water, then drain them well, and pat them dry using paper towels.
- Pluck the strawberry stems with your hand.
- In a blender, add strawberries, vanilla extract, and maple syrup, and blend on high speed until smooth.
- A thin juice-like consistency will form; transfer it to a mixing bowl, and set aside.
- Heat a medium-sized saucepan over medium heat, then add coconut cream and agar powder.
- Whisk slowly over medium heat to dissolve the agar.
- Remove the saucepan from the heat as soon as it starts to boil.
- Transfer the hot coconut cream to the strawberry juice bowl and whisk to combine.
- Let it cool for about 20 minutes. It should neither be too hot nor too cool.
- Drain the chickpeas from the can and reserve the juice (aquafaba).
- Now, transfer 1/4 cup of the aquafaba to a stand mixer.
- Whip the aquafaba until it forms stiff peaks.
