Ingredients
- 7 ten-inch flour tortillas
- 3/4 cup sour cream
- 12 oz cream cheese (softened)
- 1 packet Hidden Valley Ranch Seasoning Mix
- 1/2 cup sharp cheddar cheese (finely shredded)
- 1/2 cup bell pepper (diced)
- 1/2 cup broccoli (diced)
- 1/3 cup green onions (diced)
- 1/2 cup carrots (diced)
- 2 oz baby arugula
Recipe
- Wash and dry the vegetables properly using paper towels.
- Take a large mixing bowl, add cream cheese, and beat until smooth.
- Add sour cream and ranch to the same bowl, and mix well.
- Now, add the broccoli, green onions, peppers, carrots, and cheddar cheese to the bowl, and stir until well combined.
- Place the tortilla on the flat working surface, and spread 1/3 cup of the prepared vegetable cream cheese mixture to the edges in a thin layer.
- Sprinkle 1/3 cup of fresh arugula over the cream cheese.
- Crefully roll up the tortilla tightly, placing the seam side down on a sheet of plastic wrap, and wrap tightly.
- Repeat the same process with the remaining tortillas.
- When ready to serve, carefully remove the tortillas from the plastic wrap.
- Slice into desirable-sized pinwheels.
- Serve immediately or refrigerate until ready to serve.
Tips
- Don’t use vegetables that contain a lot of water, like cucumbers and tomatoes.
- Dice all the vegetables into the same size.
- Do not overfill the tortillas, or else you will get air pockets while rolling.
