Easy 4-Ingredient Mango Sago Recipe

Ingredients
- 750 g mangoes (fully ripe)
- 115 g tapioca pearls (small, uncooked)
- 400 ml coconut milk (whole-fat kind)
- 80 ml sweetened condensed milk
- Fresh mint leaves ( to garnish)
Recipe
- Take a medium-sized pot, fill it with 5 cups of water (1250 ml), and bring it to a boil.
- Reduce the heat, then add tapioca pearls, and boil for another 10 minutes, stirring occasionally.
- Turn off the heat, cover, and let it rest for 10-15 minutes, until the pearls are translucent.
- Now, strain the tapioca pearls through a fine sieve and rinse off the extra starch with cold running water.
- Strain again and transfer to a large mixing bowl.
- Add the coconut milk to the tapioca bowl and mix well until combined.
- Now peel, de-pit, and slice only 2 mangoes, then put them into a blender with condensed milk and blend until smooth.
- Slice off the sides of the remaining mangoes, as close to the pit as possible, then score the flesh into 1-cm cubes.
- Scoop out the cubes using a large spoon and set aside.
- Divide the mango mixture among 4 dessert bowls, then pour the coconut sago mixture over it.
- Top with the mango cubes, and garnish with fresh mint leaves.
- Serve and enjoy cold.

- The leftover mango sago can last upto 2 days when stored in an airtight container.
