Ingredients
- 2 English cucumbers
- 9 slices of whole-grain sandwich bread
- 8 oz cream cheese (softened)
- 1 tablespoon dijon mustard
- 4 tablespoons unsalted butter
- 1 tablespoon lemon juice
- 1 bunch fresh dill
- Salt and cayenne pepper (adjust to taste)
Recipe
- Start by preparing the cucumbers. Slice the cucumbers into approximately 18 slices, about 1/4-1/2 inches wide.
- Using a round cutter about 1¾ inches, cut the skin off each cucumber slice.
- Now, using a 1-inch round cutter, cut a hole in the middle of each slice to create space for the dill mixture.
- Wrap all the prepared cucumbers in plastic wrap and refrigerate until you are ready to assemble.
- Cover a baking sheet with parchment paper and set aside.
- Set 4 sprigs of dill aside in the refrigerator for garnish.
- In a food processor, add cheese, mustard, lemon juice, butter, and the remaining dill.
- Blend the ingredients until the dill is finely chopped, and the mixture is very smooth.
- Season with salt and cayenne pepper and blend one last time to combine everything perfectly.
- Spread a thin layer of the prepared dill spread on each slice of bread, and spoon the remaining spread into a zip-lock bag. Cut a tiny bit off one of the bottom corners.
- Using the same 1¾-inch round cutter, cut about 4 rounds from each bread slice covered with dill spread and place them on the baking sheet.
- Now, place one cucumber slice on each round of bread, then use the zip-lock bag with the dill spread to fill the hole in each slice.
- Break off the tiny sprigs you kept aside and place them in the center of each canapé.
- Keep chilled until ready to serve.
