- 1½ cup Whole Milk
- 1½ cups Heavy Cream
- ¼ teaspoon Salt
- ¾ cup Sugar
- 4 large egg yolks
- 1-2 teaspoons vanilla bean paste or pure Vanilla Extract
Recipe
- Heat the milk over medium-high heat until it’s steaming hot, but don’t boil it.
- Remove the pot from the heat and turn the heat to medium-low.
- Whisk the egg yolks and sugar in a heat-proof bowl, and slowly pour the milk into the eggs.
- Continue to whisk to prevent the eggs from scrambling.
- Transfer the milk and eggs back to the pot and put it on the heat.
- Cook, stirring constantly for about 4-5 minutes, until the custard thickens.
- Remove the pot from the heat.
- Add cream, vanilla, and salt to the pot and stir well.
- Let it cool at room temperature and then place it in the freezer for about 1 hour, until the custard is cold.
- Now, transfer the custard to your ice cream maker and churn as per the provided instructions.
- Freeze the ice cream until solid.
- Serve and enjoy.
Tips
- If the custard gets overcooked, remove it from the heat, transfer it to a blender, and blend.
- Adjust the vanilla flavour according to your taste.
- To store the ice cream, cover the ice cream with a piece of parchment before covering it with a lid. Use an air-tight container.
