- 2 hard-boiled eggs

- 2 leaves of butter lettuce
- 1 Rome Tomato or (2 small petite tomatoes)
- 2 green onions
- 1/8 teaspoon pepper
- 1/8 cup mayonnaise
- 1/8 teaspoon salt
Recipe
- Start by preparing the sandwich filling.
- Cut the tomatoes in half, scoop out the pulp and seeds, and discard. Dice the tomato flesh into small pieces.
- Next, chop the green onions and lettuce leaves thinly.
- Mash the hard-boiled eggs.
- Take a small mixing bowl, and mix the mashed hard-boiled eggs, diced tomatoes, chopped lettuce, green onions, and mayonnaise.
