Ingredients
For Grilled Veggie Wraps
- 4 large flour or whole wheat tortillas
- 1 small eggplant (sliced into 1/2-inch rounds)
- 1 large red bell pepper (seeded and cut into stripes)
- 1 medium red onion (sliced)
- 1 medium zucchini (sliced into 1/2-inch planks)
- 1 teaspoon garlic powder
- 2 tablespoons Olive oil (for grilling)
- 1/2 cup hummus (optional)
For Zesty Heb Sauce
- 2 tablespoons lemon juice (plus 1 teaspoon zest)
- 1 tablespoon red wine vinegar
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes
- 1 cup fresh parsley leaves (packed)
- 1/3 cup extra virgin olive oil
- 2 cloves (minced)
- Salt and pepper to taste
Recipe
- Start by preparing the zesty herb sauce.
- Add the parsley leaves, lemon juice, zest, pepper flakes, vinegar, garlic, and oregano to a food processor and pulse until finely chopped.
- While the blender is running, add in the olive oil until blended but slightly textured.
- Add salt and pepper to the prepared sauce, and set aside.
- To prep the veggies, take a bowl and add olive oil.
- Add the slices of zucchini, onion, eggplant, and bell pepper to the bowl and toss to coat the veggies evenly.
- Preheat your grill or grill pan to medium-high heat.
- Now, grill the vegetables in batches for 3-5 minutes per side until they have char marks and are tender.
- Place the tortillas on the grill for about 30 seconds per side to warm them.
