- Chicken carcasses

- Pig trotters
- 2 Carrot
- 3 Long green onions
- 1″ Ginger
- 1 Tomato
- 3 Chinese celery stalks
- Salt to taste

Steps
- Place chicken carcasses, feet, and pig trotters in a stock pot. Cover with water.
- Bring to a boil and cook off the blood.
- Remove from heat, drain, and rinse. Clean out the pot and place the meats back in.
- Cut carrot, long green onion, tomato, and celery into rough pieces; add to pot.
- Slice ginger and add to the pot.
- Cover ingredients with water, bring to a boil, and simmer for 1-2 hours.
- Season with salt.
- Strain the stock and place it in the hot pot cooker.
- When the stock is boiling in the cooker, add your hot pot ingredients.
- Remove as each ingredient cooks and serve with a soy-vinegar sauce.
