Matcha Cream Pavlova Recipe

Ingredients
- 3 teaspoons Matcha Powder
- 300 ml thickened cream
- 4 egg whites (at room temperature)
- 1 tablespoon cornflour
- 1/4 teaspoon cream of tartar
- 1 cup caster sugar
- Pinch of salt
- Icing Sugar (to serve)
- Berries (to decorate)
Recipe
- Preheat the oven to 110˚C, and lay a piece of baking paper on a lightly greased baking tray.
- Whisk the egg whites into soft peaks using an electric stand mixer fitted with a whisk attachment.
- While the mixer is running, gradually add 1 tablespoon of caster sugar at a time, beating until glossy.
- Add the cornflour, tartar, and salt to the remaining caster sugar, and continue mixing.
- Beat for a further 10 minutes after all the sugar has been added.
- Now, spread the prepared mixture onto the lined tray into a 20 cm circle.
- Keep adding the mixture to the center while pressing it down to form a pavlova.
- Bake for about 90 minutes, then turn off the oven and let it stand for 2-3 hours, until it is nearly but not completely cool.
- Now, whip the thickened cream and matcha powder together until soft peaks form.
- Top the pavlova with the prepared matcha cream, and scatter the berries.
- Dust some icing sugar over the pavlova.
- Serve and enjoy.
