- 1/3 cup tahini
- 1/2 cup lightly fresh-packed cilantro (plus more for garnish)
- 1 ½ cups shelled edamame (organic and defrosted)
- 1/3 cup lemon juice
- 2-4 tablespoons water
- 3 tablespoons extra virgin olive oil (plus more for garnish)
- 1/2 teaspoon fine-grain sea salt
- 1 medium garlic clove (roughly chopped)
- Sesame seeds (for garnish)
Recipe
- Add tahini, lemon juice, olive oil, garlic, and salt to a high-speed blender, and process for about 1½ minutes, or until the mixture is well blended.
- Occasionally, scrape the sides and base of the blender.
- Add cilantro to the same blender and process for about 1 minute or until the mixture is a smooth, fine paste.
- Now add half the edamame and 2 tablespoons of water to the same food processor and blend for about 1 minute.
- Scrape down the sides and base of the blender again, then add the remaining edamame and process until the hummus is thick and smooth.
- Transfer the prepared hummus into a serving bowl.
- Drizzle the extra-virgin olive oil over the hummus and garnish it with cilantro.
Tips
- To defrost the edamame, bring a pot of water to a boil, then add frozen edamame and simmer for about 4-6 minutes.
- If your hummus turns too thick, add 1-2 tablespoons of water again, and process for about 1 minute.
- Before serving, taste the hummus and blend in salt if necessary.
- Store the leftover hummus in an airtight container in the fridge for 4-6 days.
