Ingredients
For The Dressing
- 1/3 cup pickle brine
- 1/3 cup sour cream
- 3/4 cup mayonnaise
- 2 teaspoons yellow mustard
- 1/2 teaspoon sugar
- 1/2 teaspoon kosher salt
For The Salad
- 1 lb short pasta
- 8 strips of bacon (cut into 1-3-inch square pieces)
- 3 large pickles (finely chopped)
- 3 mini cucumbers (finely chopped)
- 1/3 cup red onions (finely chopped)
- 1/4 lb block mild cheese (cut into smaller pieces)
- 2-3 tablespoons roughly chopped fresh dill (plus more to garnish)
- Salt (adjust to taste)
- Pepper (adjust to taste)
Recipe
- Place a large pot of water on the stove and bring it to a boil.
- Next, set a skillet over medium-high heat and place the bacon pieces in the pan without adding any oil.
- Cook the bacon, stirring occasionally, until the fat is rendered out and the bacon is crispy and brown.
- Transfer the cooked bacon to a tray lined with a paper towel.
- As the pasta water boils, season with salt and cook the pasta to your liking.
- Once the pasta is cooked, drain well and place it in a large mixing bowl, and let it cool.
