- 2 firm ripe avocados (pitte and cut into 1/2-inch pieces)
- 1/2 English cucumber (cut into /2-inch pieces)
- 3/4 cup cherry tomatoes (halved)
- 1/4 cup fresh cilantro (chopped)
- 1/2-1 jalapeño pepper (diced)
- 1/3 cup red onion (diced)
- Flaky sea salt (optional)
Dressing
- 2 tablespoons avocado oil
- 2½ teaspoons honey
- 3 tablespoons fresh lime juice
- 1 teaspoon sea salt
- 1 garlic clove (grated)
- 2/4 teaspoon ground cumin
- Freshly ground black pepper
Recipe
- Start by preparing the salad dressing.
- Whisk together the fresh lime juice, honey, avocado oil, garlic, salt, cumin, and several grinds of pepper in a small mixing bowl.
- Set aside a little of the cilantro, red onion, and jalapeño for garnish.
- Take a medium-sized bowl, and add avocado to it.
- Now, evenly arrange the diced tomatoes, cucumbers, and remaining cilantro, red onion, and jalapeño on top.
