Fluffy Pancake Recipe
Ingredients
- 1½ cups all-purpose flour (spooned and leveled)
- 1 tablespoon baking powder (aluminum-free)
- 2 tablespoons sugar
- 1/2 teaspoon table salt
- 1 large egg
- 1 ¼ cups milk
- 2 teaspoons vanilla extract
- 5 tablespoons unsalted butter (plus extra for skillet)
Recipe
- Melt the butter and set it aside to cool.
- Whisk together the flour, sugar, baking powder, and salt in a medium bowl.
- In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
- Now, create a well in the center of the dry ingredients, and pour the wet ingredients.
- Gently whisk the flour until well incorporated and let it rest. The batter will begin to have tiny bubbles.
- Place a large skillet over medium heat. Brush the skillet with melted butter.
- Scoop the batter into the skillet using a 1/4 measuring cup and gently spread each pancake into a 4-inch circle.
- After 2 minutes, the edges will become dry, and bubbles will form on the surface.
- Flip the pancakes and cook for 2 more minutes or until lightly browned.
- Repeat with the remaining batter using additional oil.
- Enjoy your pancakes with maple syrup, butter, and berries.
Tips
- If the batter gets too thick, splash in more milk to thin it out.
- To check whether the skillet is warm enough, sprinkle a few drops of water on the surface. They would dance around and evaporate quickly.
- If cooking multiple batches, heat your oven to 200°F and place a baking sheet inside. Transfer the cooked pancake to the warm oven to keep warm until you are ready to serve.
