Ingredients
- 2 tablespoons dried parsley
- 2 tablespoons rubbed dried sage
- 2 tablespoons dried thyme leaves
- 1 (15 pound) whole turkey, neck and giblets removed
- 1 medium orange, cut into 8 wedges
- 1 tablespoon lemon-pepper seasoning
- Salt to taste
- 2 tablespoons ground dried rosemary
- 2 stalks celery, cut into ½-inch slices
- 1 (750 milliliter) bottle of champagne
- 1 medium onion, chopped into large pieces
- 1 (14.5-ounce) can chicken broth
- 1 medium carrot, cut into ½-inch slices
Directions
- Gather all the ingredients. Preheat your oven to 350°F (175°C). Line a roasting pan with long sheets of aluminum foil so you can wrap them around the turkey later.
- In a small bowl, mix parsley, rosemary, sage, thyme, lemon-pepper seasoning, and salt.
- Rub this herb mix inside the turkey cavity. Then fill the cavity with orange wedges, onion, carrot, and celery. Tie the turkey legs together with a kitchen string and tuck the wings under the body.
- Place the turkey on the foil in the roasting pan. Pour champagne and chicken broth over it, making sure some liquid also seeps into the cavity.
- Bring the foil up and over the turkey to cover it completely. Seal the edges, but try not to let the foil touch the turkey.
- Roast the turkey for 2½ to 3 hours, until the juices run clear. Then uncover it and bake for another 30 to 60 minutes, until the skin turns golden brown. The thickest part of the thigh should reach 180°F (80°C) when checked with a meat thermometer.
- Take the turkey out of the oven, cover it with two sheets of foil, and let it rest in a warm spot for 10 to 15 minutes before slicing.
