Ingredients
- 1 (2-pound) boneless beef chuck roast
- 1 tablespoon olive oil
- ½ teaspoon dried rosemary
- 1 (12 fluid ounce) can or bottle Irish stout beer
- ½ teaspoon ground thyme
- 1 pound small round red potatoes
- salt and ground black pepper to taste
- ½ teaspoon steak seasoning
- 4 cloves garlic, minced
Directions
- Preheat your oven to 325°F (165°C).
- Place the beef roast in a large bowl or dish. Pour the beer over it and let it marinate for at least 1 hour (or overnight in the fridge for a stronger flavor).
- Remove the roast from the beer and pat it dry. Save the beer marinade.
- Rub the roast with olive oil, rosemary, thyme, steak seasoning, black pepper, and minced garlic.
- Put the roast in a roasting pan or Dutch oven. Pour the saved beer around the meat.
- Add the red potatoes around the roast. Sprinkle them with a bit of salt and pepper.
- Cover the pan with a lid or foil.
- Roast in the oven for about 3 hours, or until the beef is tender and cooked through.
- Remove from the oven, let the beef rest for 10 minutes, then slice. Serve with the potatoes and the juices from the pan.
