Yellow Rice Chicken Pot
Ingredients
- 2 cups long-grain rice
- 500 grams chicken pieces (bone-in or boneless)
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 teaspoon grated ginger
- 1 teaspoon turmeric powder
- 1 teaspoon paprika
- ½ teaspoon black pepper
- 1 teaspoon salt (adjust to taste)
- 3 cups chicken broth or water
- 2 tablespoons cooking oil or butter
- 1 cup mixed vegetables (peas, carrots, or corn)
- 1 tablespoon lemon juice
- 2 tablespoons chopped fresh coriander or parsley
Recipe
- Rinse the rice under running water. Wash until the water runs clear. Drain and set aside.
- Heat oil or butter in a large pot over medium heat. Add the chopped onion. Cook for 3–4 minutes until it turns soft and light golden.
- Add minced garlic and grated ginger. Stir well and cook for about 1 minute. This step releases the aroma.
- Add the chicken pieces to the pot. Cook for 5–6 minutes. Stir occasionally so the chicken browns on all sides.
- Add turmeric powder, paprika, black pepper, and salt. Mix well so the chicken gets coated with the spices.
- Pour in the chicken broth or water. Stir gently and bring the mixture to a light boil.
- Add the rinsed rice to the pot. Stir once so the rice spreads evenly.
- Add the mixed vegetables. Spread them evenly across the rice.
- Reduce the heat to low. Cover the pot with a lid. Let the rice and chicken cook for 18–20 minutes.
- Check the pot after the cooking time. The rice should be soft, and the liquid should be absorbed.
- Turn off the heat. Let the pot sit covered for 5 minutes. This helps the rice settle and become fluffy.
