Pork Cabbage Dumplings
Ingredients
For the Dumplings
- 1 pound ground pork
- 1/2 cup chopped green onions (about 3)
- 1/2 inch piece of ginger, peeled and grated
- 1 tablespoon coconut aminos
- 1 teaspoon fish sauce
- 1/2 teaspoon toasted sesame oil
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1/4 teaspoon black pepper
- 15 savoy cabbage leaves (or green cabbage, ends trimmed)
- About 2 cups of broth
- 1/2 teaspoon kosher salt
For the Sauce
- 2 tablespoons coconut aminos
- 1 tablespoon lime juice (about 1/2 lime)
- 1 1/2 teaspoons fish sauce
- Toasted sesame seeds, for garnish (optional)
Instructions
- Line a baking sheet with paper towels and set aside.
- Let the large pot of salted water come to a boil.
- In a bowl, mix the pork, green onions, ginger, coconut aminos, fish sauce, sesame oil, red pepper flakes (if using), salt, and pepper with your hands until well combined.
- Put the cabbage leaves into the boiling water for about 3 minutes to soften. Remove them and place them on the paper towel–lined sheet. Let them cool, then pat dry.
- Place about 1 1/2 tablespoons of pork filling in the center of each cabbage leaf. Fold the thick stem part over the filling, tuck in the sides, and roll it up like a small burrito.
- Pour about 2 inches of broth into a pot and place a steamer basket on top. Make sure the broth doesn’t touch the basket.
- Place the dumplings seam side down in the basket (stacking is delicate). Bring the broth to a boil, cover, and steam for 12–13 minutes, until the pork is fully cooked. Cut one open to check.
- If using an electric steamer: fill with broth, add dumplings, cover, and steam for 15 minutes.
- While the dumplings are steaming, make the sauce by mixing coconut aminos, lime juice, and fish sauce.
- Once cooked, transfer the dumplings to a plate with tongs. Sprinkle with sesame seeds, serve with dipping sauce, and enjoy!
