One Pot Chicken And Rice Recipe
Ingredients
- 1 cup long-grain white rice
- Approx 600 grams boneless, skinless chicken thighs
- 1 diced yellow onion
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/4 teaspoon salt (adjust to taste)
- 1/4 teaspoon pepper
- 2 teaspoons paprika
- 1 teaspoon chopped parsley to garnish
- 2 tablespoons cooking oil
- Approx 2 cups of vegetable broth
Recipe
- Prepare a seasoning mix by combining paprika, oregano, thyme, garlic powder, onion powder, salt, and pepper in a small bowl.
- Coat both sides of the chicken thighs with the prepared seasoning mix.
- Add 1 tablespoon of cooking oil to a deep skillet over medium heat. Swirl to coat the entire surface with oil.
- Cook the thighs for a few minutes on each side till they turn brown.
- Now, place the browned chicken on a clean plate.
- Add 1 tablespoon of cooking oil to the skillet over medium-low heat, and add the diced onion. Sauté the onion for about 5 minutes.
- Add the uncooked rice to the skillet and continue to saute for 2 more minutes.
- Pour the vegetable broth into the skillet and stir briefly til it dissolves the remaining brown bits at the bottom of the skillet.
- Place the chicken on top of the rice in the skillet and cover it with a lid. Turn the heat to medium-high and allow the broth to boil.
- Once the broth comes to a boil, turn the heat low and let the chicken and rice continue to simmer without lifting the lid for about 20 minutes.
- After 20 minutes, turn off the heat and let it rest for about 5 more minutes.
- Remove the lid and fluff the rice around the chicken.
- Garnish it with the chopped parsley. Serve warm and enjoy.
