- ½ to 1½ cups mix-ins such as berries, dried fruit, or chocolate chips (optional)
- 1 large egg
- ½ cup buttermilk or heavy cream
- 8 tablespoons unsalted butter (frozen for at least 1 hour)
- Coarse sugar (for sprinkling)

- Line a large baking tray with parchment paper.
- Whisk together the flour, sugar, baking powder, and salt in a large bowl.
- Grate the frozen butter on the large holes of a box grater.
- Add the grated butter to the flour mixture and toss to coat. Using your hands, work the butter into the flour until the mixture turns to a coarse meal.
- Add the mix-ins and toss well.
- Whisk together the buttermilk, egg, and vanilla in a medium bowl and pour it over the flour mixture.
- Mix it with a spatula until the dough takes a shaggy form. Use your hands to knead the dough. The dough should feel soft and non-sticky.
- Form the dough into a ball and transfer it to a lightly floured surface.
