Ingredients
- 1/3 cup plain whole milk Greek yogurt
- 1 teaspoon lemon zest
- 2 tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- 1 1/2 teaspoons dried oregano
- 3/4 teaspoon salt
- 3 to 4 (6-inch) bamboo skewers*
- 6 Greek pita flatbreads
- 3 tablespoons lemon juice
- 1/2 teaspoon freshly ground black pepper
- 2 pounds skinless, boneless chicken thighs
- 1/2 teaspoon paprika
- 1 (9-12-ounce) carton tzatziki
- 1 large tomato, thinly sliced
- 1/2 teaspoon dried dill
- 1/2 cup thinly sliced red onion
Directions
- Get all the ingredients ready. Heat the oven to 400°F (200°C). Line a 9×5-inch loaf pan with parchment paper.
- In a large bowl, mix yogurt, lemon zest, lemon juice, olive oil, garlic, oregano, salt, paprika, dill, and pepper. Add the chicken and stir to coat it well.
- Place the chicken thighs in layers inside the loaf pan. Push 3 to 4 bamboo skewers straight down through the chicken to keep it in place. Spread the leftover yogurt mix on top. (If you like, cover and let it marinate in the fridge for 2 hours or overnight.)
- Bake for about 1 hour and 10 minutes, until the chicken is browned and soft, and a thermometer inserted in the center reads 170°F (77°C).
- Let it rest for 10 minutes.
- Pour out the liquid from the loaf pan. Place the chicken on a cutting board, remove the skewers, and slice it across the grain.
- Place the chicken, pita, tzatziki, tomato, and red onion on a platter so everyone can make their own gyros.
