Ingredients
For Wraps
- 3 large chicken breasts, boneless, skinless. Chopped into 1-2″ pieces
- 1/4 cup olive oil
- 1/2 tsp dried oregano
- 1/2 tsp cumin
- 1/4 tsp coriander
- 1/2 tsp pepper
- 1 tbsp lemon juice
- 1 tsp salt
- 1 tbsp lemon juice
- 1/4 tsp paprika
- 6 10″ tortilla
- 3 Roma tomatoes sliced and halved
- 6 cups baby spinach
- 2 tsp chopped garlic
- 3 cups shredded cheddar
- 1/2 large red onion sliced
For Sauce
- 1/2 cup mayonnaise
- 3 tsp chopped garlic
- 1 tsp salt
- 1 tsp pepper
- 1/2 tsp lemon juice
- 1 tbsp tahini
- 1-2 tbsp sriracha
- 1/2 cup Greek yogurt
Instructions
For The Wraps
- Put all the chicken in a ziplock bag and add the oil, spices, lemon juice, and zest. Seal the bag, press out the air, and rub the chicken so it’s well coated. Let it marinate for 2 hours.
- Heat a large pan on medium-high, add the chicken with the marinade, and cook for about 8 minutes or until done. Remove from heat, cover, and let it rest for the same time it cooked.
- Assemble the wraps with the fresh toppings, leaving one end open.
For The Sauce
- Mix all the ingredients with a whisk until smooth, then pour into a sauce bottle or cover and store in a container.
