Letters To Santa Cookies Recipe
Ingredients
- All-purpose flour, for dusting
- 1 (14-oz.) refrigerated pie dough (for two crusts)
- 1/2 cup (85 g.) white chocolate chips
- 1/2 cup Nutella
- 12 silver sugar pearls
- 1 large egg
- Confectioners’ sugar, for dusting
- 2 Tbsp. granulated sugar
- 3/4 tsp. ground cinnamon
Directions
- Mix the sugar and cinnamon in a small bowl. Lightly flour your counter and roll one pie dough into an 11-inch circle. Cut it into an 8-inch square, then cut that into four smaller squares. Do the same with the second dough. Gather the scraps, roll them into another 8-inch square, and cut out 4 more squares. You should have 12 squares in total.
- Put the chocolate chips in a small microwave-safe bowl. Heat them in the microwave for 20 seconds at a time, stirring after each round, until the chocolate is melted and smooth. This should take about 1 minute.
- Turn each dough square so that a corner faces you. Sprinkle cinnamon sugar on top. Place one heaping teaspoon of Nutella in the center. Fold the right and left corners toward the middle. Then fold the bottom corner up to make an envelope shape. Press gently to seal. Add a small dab of melted chocolate to the bottom fold and press a pearl on top to stick. Place the cookies on a parchment-lined baking sheet. Refrigerate for about 30 minutes until firm.
- Place an oven rack in the center and heat the oven to 375°F (190°C). In a small bowl, whisk the egg with 1 tablespoon of water. Brush the cookies with egg wash.
- Bake the cookies for 15 to 20 minutes, until they are golden brown. Let them cool on the baking sheet for 10 minutes, then move them to a wire rack to cool completely. Dust with powdered sugar before serving.
