Ingredients
- 10 to 12 boiled eggs
- 2 tsp lemon juice
- salt and pepper to taste
- red food coloring
- soft new paint brush
- mayonnaise (optional- add 1 tsp at a time as needed to achieve optimum creaminess)
- 2 tbs dill relish
- sliced black olives
- 1 ripe avocado
Directions
- Peel the eggs and cut them in half lengthwise. Gently remove the yolks.
- In a bowl, mash the yolks with avocado, dill relish, and lemon juice. (If the avocados are firm, use a food processor.)
- Add 1 teaspoon of mayo at a time if the mixture needs to be creamier.
- Season with salt and pepper.
- Dip a small paintbrush in a little red food coloring and paint “bloodshot eyes” on the egg whites.
- Spoon the yolk mixture back into the eggs and place a sliced black olive on top.
- Keep the eggs in the fridge and serve within 6 hours for the best taste.
