Ingredients
- 1 cup white sugar
- 2 large eggs
- ½ cup orange juice
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 12 ounces golden raisins
- 8 ounces halved glace cherries
- 1 cup butter, softened
Directions
- Preheat your oven to 300°F (150°C). Grease a 9×5-inch loaf pan and line it with parchment paper.
- In a large bowl, beat the butter and sugar until light and fluffy. Add the eggs one by one, mixing well after each. Stir in the orange juice until smooth.
- Sift the flour and baking powder together. Take out 1/3 cup of this flour mix and toss it with the raisins and cherries so they don’t sink to the bottom of the batter.
- Add the remaining flour mixture to the batter and stir gently until just combined. Then fold in the floured raisins and cherries.
- Pour the batter into the prepared pan and bake for about 2 hours and 15 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely. Wrap it tightly in plastic wrap or foil and store in an airtight container at room temperature for a few days to let the flavor improve.
