Cake Mix Peppermint Bark Cookies
Ingredients
- 1 box (15.25-oz.) devil’s food cake mix
- 2 large eggs
- 1/2 cup crushed candy cane or peppermint candies
- 1 tablespoon coconut oil, melted
- 2/3 cup chopped white chocolate peppermint bark
- 5 tablespoons butter, melted
Instructions
- In a large bowl, mix the cake mix, eggs, butter, and oil until just combined. The dough will be thick, so use a wooden spoon or spatula.
- Gently fold in the chopped white chocolate peppermint bark. Cover the bowl with plastic wrap and chill the dough in the refrigerator for 10 to 15 minutes.
- Preheat the oven to 350°F. Place the crushed peppermint candies in a small bowl. Scoop the dough into golf ball-sized balls.
- Dip the top of each ball into the crushed candies. Place them on a parchment-lined baking sheet. Gently press the tops with your hand to flatten them slightly.
- Bake for 4 minutes. Remove the pan and tap it on the counter a few times to help the cookies spread. Put the pan back in the oven and bake for another 3 to 4 minutes, until the tops are no longer shiny but the cookies are still soft inside.
- Let the cookies cool on the baking sheet for 5 to 10 minutes. Then move them to a wire rack and let them cool completely.
