Ingredients
- 2 1/2 pounds well-marbled beef chuck
- 1/4 cup all-purpose flour
- 3 tablespoons olive oil
- 2 yellow onions, cut into 1-inch pieces
- 1 cup tomato sauce, crushed tomatoes, or tomato puree
- 1 teaspoon freshly ground black pepper
- 1 pinch cayenne pepper
- 4 cups beef bone broth
- 3 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 4 carrots, peeled and cut into 1-inch pieces
- 3 stalks of celery, sliced
- 1/2 cup soy sauce
- 3 large Yukon Gold potatoes, peeled, and cut into 2-inch pieces
- 2 teaspoons kosher salt
Directions
- Place the beef on a cutting board and cut it into even 1½-inch pieces. Sprinkle with salt and 2 tablespoons of flour. Toss the beef until it’s well coated.
- Heat vegetable oil in a large heavy pot over high heat. Add some of the beef in a single layer (don’t crowd the pot) and brown it well on at least two sides. Do this in 2 or 3 batches. Move the browned beef to a bowl and set aside. Lower the heat a bit if it’s browning too fast.
- When all the beef is browned and removed, reduce the heat to medium-high and add the onions to the pot. Cook for a few minutes until they start to turn soft and translucent. Add the tomato paste and cook for about 4 minutes, stirring until it starts to brown around the edges.
- Sprinkle in the remaining two tablespoons of flour. Stir and cook for 2 minutes. Pour in the tomato sauce and beef broth, then add Worcestershire sauce and soy sauce. Stir well and bring the stew to a boil.
- Add the browned beef and any juices from the bowl back into the pot. Stir, lower the heat to low, cover, and let it simmer gently for 1 hour.
- After an hour, uncover and add black pepper, cayenne, carrots, celery, and potatoes. Cover again and simmer on low for another hour.
- Finally, remove the lid and let the stew cook uncovered for about 1 more hour, or until the sauce thickens and the meat is very tender. Taste and adjust seasoning if needed. Serve hot with rice.
