Ingredients
For The Bread
- 3 1/2 cups Flour
- 2 tsps sugar
- 2 tsps Salt
- 1/4 cup olive oil
- 2 tbsps balsamic vinegar
- 1 1/2 cups water Warm
- 2 tbsps Olive oil
- 2 1/2 tsps yeast Quick rise
For The Hummus
- 1 19 oz chickpeas, drained
- 1 tsp salt
- 1 tsp cumin
- 2 – 3 tbsps water
- paprika for serving
- chopped garlic for serving
- 1/3 cup tahini
- 2 tbsps chopped garlic
- 2 tbsps olive oil
- 1/3 cup lemon juice
Instructions
For the Bread:
- In a large bowl, mix all the dry ingredients with water and two tablespoons of olive oil. Stir with a wooden spoon until the dough comes together (about 30–60 seconds).
- Lightly coat the dough with flour and knead it into a smooth, firm ball. Take it out of the bowl, add one teaspoon of olive oil to the bowl, and spread the oil around the sides.
- Put the dough ball back in the center, cover the bowl with a tea towel, and let it rest in a warm place for 1 hour.
- Once the dough has doubled in size, divide it into 3 equal pieces.
- Knead each piece into a tight ball, cover with a tea towel, and let them rest for 10 minutes.
- Preheat the oven to 375°F.
- Shape each ball into a loaf about 9–10″ long and 2–3″ wide. Place them on a greased baking dish, leaving space between each loaf.
- Cut a shallow diagonal slit on top of each loaf.
- Bake on the bottom rack for 22–23 minutes. Move the loaves to a cooling rack and let them cool completely.
Making the Crostini:
- Turn on the broiler.
- Slice the bread diagonally into ½” thick pieces and place them on a baking sheet.
- Whisk the oil and vinegar together, then brush the mixture on top of the slices.
- Broil for 45–90 seconds, until golden and toasted.
FOR THE HUMMUS
- Put all the ingredients (except water and garnishes) into a food processor. Blend for 2–3 minutes until smooth.
- If the texture is too thick, add a little water. Adjust the taste with extra lemon juice or garlic if needed.
- Cover and refrigerate for at least 1 hour, or 3+ hours for best flavor.
- When ready to serve, make a small well in the center of the hummus. Fill it with olive oil and chopped garlic, then sprinkle generously with smoked paprika.
