Ingredients

• 3–4 pounds beef chuck roast (or brisket, round roast)
• 1 large onion, sliced
• 3–4 carrots, cut into chunks
• 3–4 potatoes, cut into large pieces
• 3 garlic cloves, chopped
• 2 cups beef broth
• 1 tablespoon Worcestershire sauce
• 1 teaspoon dried thyme
• 1 teaspoon dried rosemary
• Salt and black pepper, to taste

Directions

1. Season the beef with salt, pepper, thyme, and rosemary. If you want extra flavor, sear the roast in a hot pan for 2–3 minutes on each side before adding it to the slow cooker.
2. Place onions, carrots, and potatoes at the bottom of the slow cooker.
3. Put the seasoned beef roast on top of the vegetables.
4. Pour in beef broth and Worcestershire sauce.
5. Cover and cook on low for 8–10 hours, or on high for 5–6 hours, until the beef is fork-tender.
6. Remove the beef and vegetables, and let the meat rest for a few minutes before slicing.
