Ingredients
- 8 oz (225 g) fresh or frozen udon noodles
- 1/2 lb (225 g) pork (thinly sliced or ground)
- 2 cloves garlic, chopped
- 1 tbsp fresh ginger, grated
- 1–2 heads bok choy, chopped
- 3 green onions, sliced
- 3 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- 1 tsp sesame oil
- 1 tbsp vegetable oil
- 1/2 cup chicken or vegetable broth
- Salt and pepper to taste
Steps
- Cook the udon noodles according to package directions. Drain and set aside.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add pork and cook for 4–5 minutes until browned.
- Stir in garlic and ginger. Cook for about 1 minute until fragrant.
- Add chopped bok choy and cook for 2–3 minutes until it begins to soften.
- Pour in the broth, soy sauce, oyster sauce (if using), and sesame oil. Stir well.
- Add the cooked noodles and toss until everything is coated in the sauce.
- Stir in green onions, season with salt and pepper, and cook for another 1–2 minutes.
